Chicken Alfredo Quesadillas Recipe (2)

So normally here on TRR, the first Thursday of the month is 30 Minute Thursday! As much as I love 30 minute meals (be honest — we all do!), I won’t pass up a 10 minute meal either.

It just doesn’t get much easier.

Chicken Alfredo Quesadillas Recipe (3)

I love prepping food ahead of time because it makes for such easy meals throughout the week. These quesadillas are packed with chicken (cook it ahead of time for the week!), Alfredo sauce (buy your favorite brand or try my favorite — this Pesto Spinach Alfredo Sauce), and cheese — whichever kind is your favorite!

Chicken Alfredo Quesadillas Recipe (4)

Quesadillas are one of our favorite easy meals (especially when the fridge is stocked with Dempster’s™ tortillas!) — you can stuff them with anything you have in the fridge and they are ready in just a few minutes.Basically – top, fold and heat! It doesn’t get much easier than that.

I wanted to come up with a new twist this time, but still keep the ingredient list on the low side. With a 4 and almost-2-year-old, sometimes I only get a few minutes to quickly throw something in the pan! And since Chicken Alfredo has always been one of my favorite comfort foods, I thought this was the perfect way to enjoy it all week long!

I love the idea of a chicken Alfredo quesadilla, but the sodium levels are sport high. Any ideas on how to lower it?

    Reply

    • Ashley Fehr says

Really the only way to do that is to make everything from scratch and adjust the seasoning to suit your tastes

      Reply

      • Melanie says

Yeah… That’s not likely to happen. I’ll just make it infrequently then since I’m trying to cut down on my sodium intake

It depends on ingredients. Both can be high in calories, fats, and sodium, if made with enough cheese and fried (burrito) or processed (quesadilla) meat. On the other hand, they can both be made 'healthier'. For example, burrito can be made with grilled chicken, beans, brown rice, and vegetables.

Slowly let the cheese disolve on low heat into the cream mixture.
