Step by step method

  • STEP 1

So I am going to chop the okra, and usually this is how we cut it into smaller pieces in an attempt to get it to draw even more. But lately am being loving the chunky okra in my soup and it still becomes nicer or slimy as you call it. I just ruff chop it put it in the bowl here and set it aside. I will chop my vegetables up add some salt to taste and shrimp seasoning and am going to go ahead and add a bit of water blend it for my marinate.

  • STEP 2

Then I will marinate my fish and set it aside for about 10 minutes before baking it. Fish take to marinate very quickly so you don’t have to let it stay for too long, so once marinated am going to take it for just about 15 – 20 minutes just to make it solid so that it doesn’t break apart in my soup then am going to marinate my scallops, shrimps and blue crabs as well then set it aside. This soup is very quick so you will make everything before you get started.

  • STEP 3

Then I grate some more ginger onto my okra, this is a corded teaspoon, then I will be using half of that of my baking soda that is all you need for you to have a good draw in your okra. You don’t need a lot, a lot of baking soda will cause your soup to darken, your okra will darken and you don’t want that you want it nice and beautifully green.

  • STEP 4

Then I am going to saute my scallops and give it this nice brown color on the outside, absolutely love scallops but it is optional you don’t have to use that. Once it’s done am going to set it aside and check on my fish and it looks like its also done.

  • STEP 5

Now my okra is completely done so I will turn the heat off, add my spinach and set it aside, the residual heat will cook the spinach.

  • STEP 6

So, in my pan I will add some coconut oil then I will add my shrimps and crabs, chickenseasoning, chopped onion, chopped habanero pepper, and am going to cook this for about a minute okay. To this am going to add some more of my marinate and a bit of water and let it cook, while I go ahead and prep my garnishing.

  • STEP 7

Our soup is beginning to look so good. Here I am using this grade of tomatoes because they don’t fall apart in the soup, and I have green and yellow peppers and some red onions. Now this soup is coming together beautifully, everything is done so I will add my scallops and I will go ahead and add my fish and let it cook about for a minute or two then I will add my tomatoes and let if soften up, for those of you that like your tomatoes you can crush it up as you eat it but its not going to mess up my draw, because tomatoes do cut the draw.

  • Now look at this beautiful okra, see, you don’t need a lot of baking soda just a little baking soda and you still have a perfectly beautiful draw and a beautiful color soup that is not so drawy but is appealing to the eyes. Because you know we eat with our eyes, when it looks good and it doesn’t taste good you want to try it, I just season with a little bit of salt to taste. Now it’s done, all I need it’s the garnish and I will just let it simmer for a minute or two. Now we are ready to serve. My baby Gape, if there’s no draw in okra soup he is like ‘mummy this is not okra soup’. Now am going to serve with this ‘Apkle’, it went so well with, you have to try this recipe and you will love it.
