Ingredients

Meat sauce

  • 1 lb 450 g ground beef or ground turkey
  • 8 oz. (1½ cups) 230 g (350 ml) yellow onionyellow onions
  • 3 3 garlic clovegarlic cloves
  • 2 tbsp 2 tbsp tomato paste
  • 14 oz. (123 cups) 400 g (400 ml) crushed tomatoes
  • ½ cup 120 ml red wine
  • 1 tsp 1 tsp salt
  • 1 pinch 1 pinch ground black pepper
  • 2 tbsp 2 tbsp butter, for frying

Lasagna Sheets

  • 2 lbs 900 g cauliflower
  • 4 4 eggeggs
  • ½ tsp ½ tsp kosher or ground sea salt
  • 1 pinch 1 pinch ground black pepper
  • ½ cup (113 oz.) 120 ml (40 g) shredded Parmesan cheese

Cheese Sauce

  • 1 cup 240 ml sour cream
  • ½ cup 120 ml heavy whipping cream
  • 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
  • salt and pepper

Making low carb simple

Instructions

Instructions are for 6 servings. Please modify as needed.

  1. Preheat the oven to 400°F (200°C).

Meat sauce

  1. Finely chop onion and garlic and fry in butter in a heavy pot.

  2. Add ground beef and keep frying until cooked thoroughly. Add tomato paste to the pot and pour in crushed tomatoes and red wine.

  3. Season with salt and black pepper and simmer for about 20 minutes.

Lasagna sheets

  1. Place parchment paper on a large baking sheet and lightly grease with oil.

  2. Finely grate a medium-sized cauliflower head with a food processor.

  3. Place the grated cauliflower in a bowl and cook for two minutes on high in the microwave. Stir and microwave for two more minutes.

  4. Cool the grated cauliflower and place in a clean kitchen cloth (towel) and squeeze the liquid out by twisting and wringing the towel. Almost a cup of liquid has to come out for the rice to be dry.

  5. Place the cauliflower rice, eggs, and spices in a bowl and combine.

  6. Spread the batter onto the parchment paper and bake on the lower rack of the oven for 15-20 minutes. Remove and let cool. Cut into adequate-sized pieces, like lasagna sheets.

Cheese sauce

  1. Bring heavy cream and sour cream to a boil, remove from heat and stir in the cheese. Add salt and pepper to taste.

Layering and baking

  1. In a deep baking dish that's about 8 x 10" (20 x 26 cm) add some bolognese sauce, top with a layer of lasagna sheets, then cheese sauce. Alternate and finish up with cheese sauce and grated Parmesan cheese.

  2. Bake for 20–30 minutes and let cool for a few minutes before serving.

    If you don't have a microwave, lightly boil the cauliflower florets first, drain them, then whizz them in a food processor. Then you can carry on with the squeezing/drying etc.

    Just fyi, sometimes you can find grated cauliflower in a bag in the refrigerated section at Aldi. Handy for those in a hurry.

    I read a lot of comments. Sounds delicious but I need a different noodle. The cauliflower I love but I don't have a food processor nor do I have a clue what ricing is.
    Could it be steamed or cooked, sliced or smashed and .....help. Would love the easier version of this.

    Can you make this up a day ahead and then cook it? I would like to make for our bible study group but I would not have enough time after work to do all of this. If I could make it up the night before and just bake the next day, that would be great. But has anyone done this and had it turn out ok?

    If it is an Italian cheese, go for it!! I usually throw in 4-5 different cheeses in my lasagna.

    Is the 3 cups cauliflower measured before or after cooking in the microwave please? I measured 3 cups of riced raw cauliflower but only measures 1 cup after microwaving. Big difference.

    I used eggplant in place of the cauliflower. I slice, bread with egg/cream mixture and crushed pork rinds, pan fry, then use it in place of noodles.

    I made this so good, used Costco cauliflower rice and microwaved and squeezed out water. This recipe is the closest to lasagne with pasta that I have ever had. Thank you

    I bake the water out of the cauli. Slice the head into .5 or 1 in slices. Use parchment, and arrange on cookie sheet. Lightly spray with cooking oil. Bake about 20-25mins. It will steam out the water and cook the cauli. THEN I mix the cooled cauli with egg and spices.

    You can omit it or use water if you need the extra liquid.

    If cooked, it should freeze and reheat well. If not cooked, it may be prone to falling apart.

    That will depend on the recipe. For a lasagna, you could use a pork based sausage or just ground pork.

    I made this for the first time yesterday. One other person suggested baking the cauliflower to steam out the moisture, so I did that and I think the little bit of char I got from roasting gave the lasagna sheets a really nice flavor. The dish was a winner! My husband went nuts for it and lasagna is one of the things he always misses. He said this doesn't make him miss regular lasagna anymore. Other than the roasting to remove moisture from the cauliflower, I followed the recipe as described. It will be on the rotation for here out!
