If you the know anything of the history of Jamaica, you'll remember that salt fish was a key ingredient in our fore-parents diet back in the days on the plantation.

In fact, much later, it was still considered 'poor people's food'.

But the ingenuity and creativity in us brought salt fish (cod fish), not only to be a key element in our national dish, but now enjoyed in many culinary delights, including yes, Salt Fish Fritters, (aka Stamp & Go)!

And please, don't be anxious, as tasty as it is, it is also, simple and fun!

INGREDIENTS

  • 1/4 pound of salt fish (cod fish)
  • 1 cup flour
  • 1 medium size tomato
  • 1 medium size onion
  • 1 small lime (juiced)
  • 1 small clove of garlic
  • 1 tsp paprika
  • 2 stalks of escallion/thyme
  • 1/2 tsp hot pepper sauce
  • Oil for frying

INSTRUCTIONS

  1. Soak salted fish for at least 3 hours, ideally overnight, then drain.
  2. Wash salt fish in lime juice again
  3. Dry the fish, then shred; remove skin and bones
  4. Chop onion, garlic, escallion and tomato finely
  5. Mix with hot pepper, paprika
  6. Mix the flour and salt fish with sufficient cold water to make a thick batter close to the consistency of a pancake.
  7. Add the chopped seasonings and mix again lightly.
  8. Heat oil in skillet.
  9. Drop the mixture by spoonfuls into the skillet and press lightly, or use knife to spread so that the fritters are thin.
  10. Fry each side until it is golden brown and crispy.
  11. Remove and drain on paper towel to remove excess oil.
  12. Serve warm.

Note that salt fish fritters also make a excellent co*cktail snack. In such case, just use a teaspoon to measure when frying.
